NOTTURNO

…the Soul

“Notturno” is our estate’s classic Sangiovese, proud ambassador of the Predappio DOC sub-area. It comes from the selection of the best grapes from all the family vineyards; harvested, vinified and aged separately and then blended together to compose a wine that fully expresses the soul of our terroir. It is a wine of great pleasantness and balanced complexity.

Notturno was also the first horse that was born in the house, just as the wine was the first born in Palazza in Claudio Drei Donà’s new course.

100% Sangiovese

VINIFICATION

Traditional fermentation with indigenous yeasts in cement and stainless steel tanks at a controlled temperature of 24°C.-27°C. Maceration on the skins for 14-18 days, Malo-lactic fermentation in steel tanks before aging.

AGING

About one year in large French oak barrels (25hl and 15hl.) and in 500lt Allier tonneaux.

AVERAGE ANNUAL PRODUCTION

53.000 btl.- 250 Magnum – 30 Jeroboam.
